PEPPERS

The bell pepper comes from the same shrub as the chili pepper. Although it is consumed as a vegetable, it is actually the fruit of a variety of nightshade. Its color changes as it ripens: it remains green when picked before maturity.

If left on the plant, it will turn yellow, then red. Very rich in vitamin C, it provides many other protective micronutrients, including carotenoids and flavonoids. The more ripe it is, hence red, the higher its concentration of antioxidant substances. Composed of over 90% water, the bell pepper contains few energy-providing nutrients. Its caloric intake remains very modest as a result.

It is primarily due to its carbohydrates, which mainly consist of glucose and fructose. Proteins and lipids are present only in very small amounts.
